Friday Facts

Happy Friday everyone! Man..only one week until Christmas! I am way too excited to have our first Christmas with Wes. And have cinnamon buns for breakfast. And presents. Here’s some stuff from the week…

  1. Tyler made an Irish Cream Chocolate Oreo Cheesecake and it is SO GOOD. I’m not a cheesecake person, but I have been anxiously waiting for Wes’s afternoon nap each day this week so that I can sit in quiet and enjoy a piece.

2. I won a giveaway on Instagram which consisted of a pack of mulling spices. They were dropped off at my house today, and I can’t wait to put them to use! (I tried to track it back on Instagram and it seems the photo was taken down? Womp.)

3. I met up with Susie on Tuesday night for dinner at Wurst. It was VERY important that we got the giant pretzel, but also had salads to round out the meal. Since we got the check by 7:30, we decided to head over to Proof to have fancy cocktails. They were ok, but not really worth the $14 price tag. I was home and in bed by 10pm. WINNING. I wore my new blanket scarf that had just came in the mail that day. (Ps: I ordered it from a credit I had on Zulily).

4. Of course I have to include some pictures of Wes in here. He had his first bath in the big tub this week and started using the spoon to feed himself! (most gets flung, but at least it’s progress!) Oh, and I posted his 8 month update this week too.

5. We have SO many presents under our tree right now. And it’s not even everything. Plus Santa still has to come. I have a feeling a certain little boy is going to get spoiled this Christmas…

8. I’ve successfully gone all week without the TV on during the day. To be honest, I could have gone without it in the evenings as well, but Tyler turns it on for us to watch a couple of game shows before bed. Only thing I’ve watched has been some random Christmas stuff on Netflix at night, one of which was A Moody Christmas (I think it’s only on Canadian Netflix and not the American one..sorry!) Super funny.

Friday Facts

  1. This week has been rough! Not sure if I can pinpoint just one thing-> Wes has been fighting his naps; Christmas shopping is a b*tch; mailing things via Canada Post is the work of the devil; my body is sore/tired all over….I could go on and on. But I remind myself it could always be worse. So I’m thankful. Plus, Wes’s cuteness helps me forget all that.

2. My Christmas ornament from Shannon via the blogger swap came in the mail this week! I really do love it AND the hot cocoa she included as well. I told Tyler we need to throw some Baileys in it after Wes goes to sleep this weekend. (Unless I’m sleeping myself, ha!)

3. My work recently switched benefit providers so when I logged into my account through them online, I noticed I still had a decent amount of $$ left within my paramedical expense allotment. 30 seconds later, I had booked a 90 minute massage! I enjoyed that sucker last night and did NOT want to leave. I asked the therapist for full/deep pressure and she sure did deliver.

4. No GREAT meals to share this week. We had Slow Cooker Chicken Enchilada Soup on Mon/Tues, meatball subs on Wed (mine’s deconstructed because soggy bread= gross), and I had BAE after my massage last night.

5. Wes is mastering sitting up on his own! I hover LIKE A BOSS because I don’t want him to cry when he’s shocked he’s fallen over. And he now fits in his Teepeetotsandco mocs! I am really excited about this for two reasons: 1) I bought them this time last year when I had no concept of how big/small babies could be and thought he’d wear them as soon as he was born, 2) The kid needs something besides socks to keep his toesies warm during the winter!

6. As of this week, I have officially joined the my-coffee-is-always-cold-because-I’m-a-mom club. I can’t drink it HOT HOT, but then I always forget to drink it because I’m dealing with a baby who NEEEEEEEDS me.

7. Most all of my Christmas shopping is done for the boys. I also bought us all Xmas jammies (shhhh don’t tell them) which are wrapped under the tree. WELL….the ONE present for me that is under the tree (the jammies) was attacked by the beagle. Darn dog. I have no idea why. He hates me? The clothes aren’t damaged, I just need to re-wrap them but I think it’s some sort of omen. Also, Tyler needs to do more shopping for me 😉 PS: You’re a mom when you wrap your own xmas present, amiright?

That’s just about it on this end! I’m sure there’s more, but I need to take a few more swigs of my (cold) coffee before anything comes to mind! Have a great weekend everyone!

 

 

Perfect Protein Pancakes

I thought I’d dedicate a post just to my favorite pancakes of all time. Ok, they’re my favorite ‘healthy’ pancakes that I eat on the regular. I didn’t start making these until after I purchased my Vitamix because I think the machine is what does the recipe justice. (How do I know? Because my previous cuisinart blender was a piece of crap and even my parent’s Ninja blender can’t hold a flame to blending the ingredients just right).

What you need:

  • 3/4 oats (I use quick oats)
  • 3/4 greek yogurt (I use plain 2%)
  • 2 egg whites

Directions:

  1. Add all ingredients into blender* (i use the dry container for my Vitamix). Blend until smooth.
  2. Pour silver dollar sized amounts of batter onto hot, sprayed skillet. Flip when you see the edges starting to look ‘dry’.

Yields: 12-16 mini pancakes

*Note: I will add egg whites first, oats then greek yogurt. If oats are placed in first, it makes it difficult to properly blend and you’ll make a couple attempts of scraping down the sized of the container with a spatula. And then when that happens, the batter will splatter around the container when you turn it back on. 

Once in a while I will add a 1/4 cup fruit into the blender for a pop of color and/or flavor.

And unless we are somehow out of it (OH THE HORROR) I always top my pancakes with Canadian maple syrup. Noms.

From the Week

Not much going on in our household this week. Some highlights if you will…

Monday: I got up early to get dressed (aka: look like a human) and take Wes to the mall to have his picture taken with Santa. Well, the kid slept until 9:15…..14 hours! I will NEVER hate on that!

Tuesday: Took a trip to Michaels then hung out around the house the rest of the day.

I think Reggie is finally warming up to Wes. We had pork tenderloin for dinner and it was delicious!

Wednesday: I had two wisdom teeth removed in the morning. UGH. Honestly (and I’m writing this 2 days post-op) I’d rather go through natural childbirth again than have to deal with this. The procedure was quick, but the discomfort and inability to eat solid food is a huge freaking pain in the ass.

Eats throughout the day: smoothie, runny oats, soup, applesauce.

I had a later afternoon nap, so I was able to stay up and watch Mission: Impossible Rogue Nation with Tyler before getting to bed.

Thursday: Such a bummer that I have a swollen face and can’t eat. Tyler had even taken the day off to celebrate Thanksgiving, but we wound up just snacking on different things throughout the day (I had scrambled eggs, a smoothie, soup and pudding. WOOO).

I skipped a workout on Wednesday for obvious reason, but NEEDED to sweat so I did a lower body workout and only modified a bit on the jumping.

I did manage to get out of the house for a bit and pick up some necessities for Wes, but it wiped me out.

It was also my parents 49th anniversary! They spent the holiday in Woodstock, VT and I wish we could have been there with them!

After Wes went to bed, we watched Inside out in 3D and I fell asleep before 9pm.

From the Weekend

No play by play on the weekend this week. I’m pretty sure if you scroll through the past dozen or so Weekend Recaps, you’ll see the same things happened. These would include:

  • eating pancakes Friday morning
  • watching a movie Friday night
  • pool class at the Y on Saturday afternoon
  • Costco
  • Sunday BRUNCH
  • hanging out
  • the end.

See? Same old same old. I hardly took any pictures either. But here’s what I’ve got..

Yup, Friday morning pancakes. While I watch an upside down, tummy sleeping Wes.

Snack: Apple slices w/pb, raisins and chocolate chips. I didn’t even want this, but it was the only healthy option in the house that wouldn’t fill me up too much before dinner.

Dinner: Leftover lasagna, caesar salad + garlic bread. Afterwards, I went to pick up another EXACT SAME jumperoo off Kijiji. Now we have one upstairs and downstairs!

Saturday dinner/dessert: CPK BBQ Chicken Pizza. I saw Costco now carries them! They’re one of my favorites (well, when you order it in the restaurant. The frozen ones aren’t the same quality, but they’re pretty OK for being frozen) & melted chocolate with Halos. Yumm.

I’m quickly realizing that many of my photos are of food. Too many.

Committed a major party foul and accidentally used ONE CUP of butter for this recipe instead of 1/2 cup. The results? Not terrible, but yeah…super buttery. I am hoping that after a couple of days in tupperware they’ll set nicely and be edible.

Who am I kidding…I’m  still gonna chow down on them today. And tomorrow. I used this recipe and used Oreos, dark chocolate chunks and semi-sweet chocolate chips. And double the butter…don’t do that.

Another non-food picture! Wes, of course. He is an absolute black hole for solid food. As soon as I buy it, it disappears. It actually makes meal time for him pretty entertaining for me. Despite the fact that he chucks his toys on the floor about 20597139523502 times.

Random dinner of a mini cheese quesadilla and a portion of southwest chopped salad. 

Some other tidbits:

  • The pool was way too cold this weekend and Wes did NOT want to be in it, so we left after 5-10 minutes.
  • I had my first fall of the snow season and completely wiped out on the ice as I was getting out of the car at Costco. Made me GRUMPY.
