Perfect Protein Pancakes

I thought I’d dedicate a post just to my favorite pancakes of all time. Ok, they’re my favorite ‘healthy’ pancakes that I eat on the regular. I didn’t start making these until after I purchased my Vitamix because I think the machine is what does the recipe justice. (How do I know? Because my previous cuisinart blender was a piece of crap and even my parent’s Ninja blender can’t hold a flame to blending the ingredients just right).

What you need:

  • 3/4 oats (I use quick oats)
  • 3/4 greek yogurt (I use plain 2%)
  • 2 egg whites

Directions:

  1. Add all ingredients into blender* (i use the dry container for my Vitamix). Blend until smooth.
  2. Pour silver dollar sized amounts of batter onto hot, sprayed skillet. Flip when you see the edges starting to look ‘dry’.

Yields: 12-16 mini pancakes

*Note: I will add egg whites first, oats then greek yogurt. If oats are placed in first, it makes it difficult to properly blend and you’ll make a couple attempts of scraping down the sized of the container with a spatula. And then when that happens, the batter will splatter around the container when you turn it back on. 

Once in a while I will add a 1/4 cup fruit into the blender for a pop of color and/or flavor.

And unless we are somehow out of it (OH THE HORROR) I always top my pancakes with Canadian maple syrup. Noms.

Homemade Granola Cereal

Oh my gosh, you guys- I just HAVE to share this recipe with you. It’s too good and too easy.

Homemade granola, as I have found out, is near impossible to screw up. So after looking at various websites and blogs on granola recipes, this is what I came up with (keeping in mind I played around with the ingredients I had on hand already!!!)

Here’s what you’ll need:

  • 6 cup quick oats (yes, quick oats- it’s what I already had and I was anticipating this granola to be more as a cereal than a pour-in-your-hand type snack)
  • 1/2 c honey
  • 1/2 c pure maple syrup
  • 2 t cinnamon
  • 4 t chia seeds
  • 2 c nuts (I had a combo of macadamia nuts and cashews from the bulk bin)
  • 1 1/2 c raisins

Here’s what you do:

  1. Preheat oven to 350. Line two baking sheets with parchment paper.
  2. Mix all ingredients except the raisins in a bowl. Make sure mixture is evenly coated.
  3. Pour mixture onto baking sheets and bake for 30 minutes, check and stirring often.
  4. Once granola is ready, remove from oven and pour in a large bowl. Add raisins and stir.
  5. Store in an airtight container.

This variation is like a maple-honey-cinnamon granola. It made the whole house smell fantastic when I made it last night, and I couldn’t WAIT to have it for breakfast this morning! I enjoyed my granola cereal with a generous portion of HUGE fresh blueberries and unsweetened almond milk. OMYGOD perfect.

And with coffee? Even better. I have no idea how I’m going to contain myself from eating all of it today.

Now that I’ve got this pretty basic granola cereal recipe down, I’m excited to try flavor  variations (*I’m pretty sure that it will be more of a snacking granola if you use old fashioned oats, but the only way I really like to eat granola is in more of a cereal form)

Blueberry Coconut Oat Bake

I was craving something warm and hearty, but I also wanted to use up some blueberries that were just about dead. What did I come up with? Something that addressed all of the above and more!

(Just eating breakfast while looking out the back window for coyotes. If you follow me on Instagram @nutcaseinpoint, you’ll see a pic of the rabid creature going through our trash)

Blueberry Coconut Oat Bake

Here’s what you’ll need:

  • 2 c oats
  • 1/4 c packed brown sugar
  • 1/2 t salt
  • 1 t baking powder
  • 1 t cinnamon
  • 2 c unsweetened almond milk
  • 1 egg
  • 3 T melted coconut butter
  • 1 t vanilla
  • 1 1/2 c blueberries

Here’s what you do:

  1. Preheat oven to 350 and prepare an 8×8 dish
  2. In one bowl, combine the oats, brown sugar, baking powder, salt and cinnamon.
  3. In another bowl, whisk the milk, egg, coconut butter, and vanilla together. 
  4. Pour most the blueberries along the bottom of the pan. Cover with the dry mixture, then top with the wet mixture. Top with remaining fruit.
  5. Bake for 45 minutes. Allow to cool for a few minutes before serving.

Enjoyed with a big mug of coffee, and I’m ready for the day! (Although I did manage to apply for a bunch of jobs online already. Look at me being all proactive)

Tacos and Pancakes

Ok, my recipe last night worked, so I can share it with you. IT IS SO GOOD.

Cilantro-Lime Pulled Pork Tacos

Here’s what you need:

  • Pork tenderloin
  • Jar of salsa verde 
  • Lime juice
  • Onion
  • Cilantro
  • Roma Tomatoes
  • Tortillas
  • Other fun stuff

Here’s what you do:

  1. Put the tenderloin in the crock pot. Cover it with the salsa verde and about 3 good squirts of lime juice. Low for 6-8 hours or High for 3-4 hours.
  2. Chop up a yellow onion and a bunch of cilantro. Put it in the fridge.
  3. An hour prior to eating, shred the pork (keep it in the crock pot), and add about 1/3 of the onion/cilantro mix.
  4. Assemble your tacos. I used corn tortillas, the pulled pork, extra onions/cilantro, diced tomatoes, mango, black beans, and guac.

I could probably eat this everyday and be happy.

Chocolate Oat Pancakes

Here’s what you need:

  • 1 c oats
  • 2 egg whites
  • 1/4 c unsweetened almond milk
  • 1 t baking powder
  • 1 scoop chocolate protein powder
  • 3 T plain greek yogurt

Here’s what you do:

  1. Beat all the ingredients together. The key is to BEAT them. Beat them REAL GOOD. (there’s egg whites in there, y’all)
  2. Spray a griddle and divide batter into 4 pancakes. The end.

I topped mine with sunflower seed frosting (a mixture of my homemade sunflower seed butter and almond milk, heated in the microwave and stirred well) and some chia seeds. With a side of blueberries.

Yesterday’s workout was 40 minutes of spin. The gym was PACKED but I managed to snag a bike. A crappy bike. The seat collapsed halfway through the ride. At least I was in 2nd position when it happened, or that could have been AWKWARD (or a reat awk spot story for Athena’s blog)

Today’s workout was Workout B from BBB and it was killer- a real upper body blaster! I was super pumped throughout the workout though because I wore my brand new Lululemon top! Oh, and 30 minutes of speed work on the treadmill. Not too shabby.

Weekend recap

Hi! Life has been in the way of blogging, so I hope you’ll pardon the absence.

Tyler came home with a surprise on Friday:

There’s a raffle here in Calgary for the local hospital and the grand prize is this dream home. When we got to the area, we had to park then wait for a shuttle to take us to the home. Omg it was gorgeous! I just want the master suite and the entertainment room and I’d be happy! Please check out the link I provided so you can see pics of the inside- it really is drool worthy.

After we were humbled by that huge house, we headed to Five Guys (Tyler’s never had it!) and once again feasted

Fast forward a bunch of hours (consumed with napping) and we decided to take a family walk to Safeway to get something for the BBQ (yes, all we do is eat in this household)
On the way home, Layla tugged a little too hard and my ankle got trapped in a little hole in the sidewalk and I bing-bang-bamboozled (also known as twisted) my ankle. Ugh, I have had too many problems with my feet in my life (twice broken foot and 25686433548383 sprains ad strains). Bad dog, Layla, bad dog.

Today has been filled with cleaning, immigration paperwork and a hop/walk with Layla. My belly is recovering from yesterday, so no food to recount from today….yet 😉

I had to take another day off from working out today because of the ankle. It’s been really hard on me trying to keep the same standard of workouts that I had while in Boston. I have put on weight and have just been overall down about the whole ordeal. Tyler does his awesome duty as my man by telling me not to worry and I’m beautiful and all that, but I can’t help but feel guilty for not keeping my bootay in shape! I am taking the rest of the day to enjoy with my wonderful man, then it’s back to the grind tomorrow some serious sweat sessions!
