I Forget What I Did Last Weekend

I really should have recapped the long weekend sooner. Because now that I’ve sat down to do it, I realize two things:

  1. I really didn’t do much
  2. …that I can remember anymore

The only way to jog my terrible memory is to look through whatever photos I managed to take. And usually on weekends, I take terrible pics.

Ok, so what happened last weekend? Hmmm. I somewhat remember eating lots of bacon and lots of eggs. I sat on the patio floor with the dogs and scared all passersby with my wispy afro.

I took the puppies to the park while Tyler was still sleeping. All the of us (me, Reggie, and Layla. Because remember, Tyler is still at home in bed at this point) frolicked around and hopped in the river. A super sunny trip to the park calls for ice cream upon our return.

So yeah, I definitely need to work on getting these posts written sooner rather than later so that they’ll actually have content. 

Harlem Shake

I have a clusterfudge of stuff to share with you (it took me 4 days to gather enough stuff worthy of a post)

Let’s start with food. I have been doing a lot of experimenting in the kitchen lately. Mostly they are just new recipes on basic meals. Still, it was fun to follow other recipes and see how they turned out.

First up: PIZZA. Tyler and I love pizza. We used to order it all the time, but I have chosen to make our pizzas as a means of controlling what goes into the mix. I like knowing there are no preservatives in my food, thankyouverymuch. However, most all the recipes I tried resulted in uber doughy pizza. Yuck. I don’t want bread for dinner, I want PIZZA.

After going home in January, I learned some special tips and tricks from my parents as to how to yield a decent homemade pizza (keep in mind the altitude in NY and the altitude here are drastically different).

Here’s a pic of my pizza- it had pineapple, olives, peppers, prosciutto, and a bit of leftover bacon crumbles from Tyler’s pizza.

It was really good- especially topped with tons of sriracha!

Sunday morning/afternoon, I made us brunch. We had hit up Costco on Saturday, so we were freshly stocked up on produce and meat and lots of other goodies.

Nothing like a TON of food on a Sunday afternoon to make you lazy. But that fruit was faaaaantastic. And so was the coffee..obviously.

Later that night, I decided to whip up yet another recipe that I finally snagged from my mom. In my parents town, there is this hot dog place that is out of this world fantastic. Not only are they tasty, but they are super cheap, and they have this really awesome meat sauce on them. My mom got the recipe from my uncle, and now it is finally in my hands. Bwahaha.

We used some of the yummy Costco hot dogs as our base (I think I managed to eat about half of this. Phew, was it a lot of food). The sauce took about 2 hours to simmer, and I’m pretty sure the next time I make it, I’ll have to put a lock on the lid- I went to the gym while it was simmering and I’m pretty sure Tyler would’ve eaten it straight out of the pot because the smell was so good.

Next up..cookies! I had recently gone to the health food store and picked up a bunch of ‘different’ baking ingredients so I decided on some paleo chocolate chip cookies.

I used this recipe, but substituted agave nectar for honey/maple syrup, used an egg, and used carob chips rather than chocolate chips (almost the same thing. google it)

They came out pretty great! At least, my tastebuds thought so because I inhaled way more than I’m willing to admit.

Ok. NEXT! Chili. I’m now on the Meatless Monday bandwagon- simply as a means to find more meals I can throw together without meat, both for money saving and health reasons.

I chose to use this recipe. Only changes I made were omitting one onion and adding a zucchini.

Meh. Quite flavorless. I added tons of sriracha in mine and Tyler mixed shredded cheddar in his, and there was hardly an ‘oo’ or an ‘ah’ at the table. I also had some leftover dough from pizza-making on friday, so I balled it off, topped with melted butter and garlic salt, and viola!

Sad to say that was probably the best part of the meal. No bueno, folks.

And last, but certainly not least, in honor of pancake day today, I made a hearty stack of coconut flour pancakes.

They took forever to cook on the griddle (different consistency since I was using coconut flour) but they still had tons of flavor.

I topped the stack with plain greek yogurt mixed with cinnamon, and strawberries/blueberries.

The fruit was yet again my favorite part of the meal. Yummmm.

Now that I have shown you all this food I’ve been eating, I guess I should jot down what I’ve been doing in attempts to burn it off.

Friday: Strength Workout C from BBB and 20 minutes of spin, followed by only 42 burpees.

Saturday: Day off. I originally planned on doing cardio, but my body felt so dead and heavy, that I opted to switch my cardio to Sunday. Thanks to a pep-talk facebook message from Athena. Thanks!

Sunday: 30 minute run and 90 burpees.

Monday: Strength Workout A from BBB, 125 burpees (done during Biggest Loser commercials) and a 30 minute run.

Now onto random things:

1. Took the dog to the dog park on Friday. Then we hopped in the car and went to another spot along the river for more walk/play.

This girl was plowing her face into the snow and ice so much that she made the bald spot on the inner part of her eyes bleed! Silly.

2. Got my visa extension in the mail yesterday. Now I can plan a visit to see my best friend in Seattle!

3. I can’t wait to meet her beautiful baby. I’m also really glad to see she’s already pumping the iron I’ve sent her 😉

4. I brought back tons of bottles and cans and cartons to the bottle return the other day. Like, 2 carts worth. And I made $32.35. Too bad I probably won’t be making that much anymore since we are reusing our special bottles for homebrew.

6. I am obsessed with the Harlem Shake videos. Honestly, I would post them all here if I could, (and I could), but I won’t. Here are a couple to give you the idea:

Layla’s lucky day

Well, folks. I did it. I turned in my last exam of grad school yesterday afternoon. I am officially done with school and have my Masters! Woo hoo 🙂

I started yesterday off quite sluggish- I wasn’t really looking forward to tackling some of the final calculus equations

But I persevered through it and was done around 3pm- plenty of time to get to the gym and the grocery.liquor store before Tyler got home! I picked up a bottle of bubbly that came with free chocolates (which oddly enough, have yet to be consumed)

Then I whipped up some grub and we had our champy and dinner in front of…..the football game.

This morning, Layla was looking a little glum.

I think she was bummed that I had more free time to bug her while Tyler’s at work. She was soon un-bummed when a package from my parents arrived at the door. My mom had strict instructions that Tyler and I couldn’t open our gifts, but Layla could. Rawr.

She seriously lucked out! A cute christmas toy and a fleece!

I decided to add to her day of excitement by taking her to the dog park. She doesn’t ever play with dogs. No. Even when there are about 3 dozen dogs (which there were today) mine is the one by herself rolling in the snow. Her and I both have social complexes, I guess.

Alright, time for me to go and get my workout over with. If not now, I might be tempted to go grab more champagne or something. I’m going to milk the celebration for as long as I can.

Pomegranates are majorly delicious. I cut open 3 of them yesterday, so I now have a big ol’ stash of yummy arils to snack on!

 

I had to eat a few spoonfuls right away just so I could get the lid on 😉

 

Tried to capture the mountains in the background while I took Layla for a walk yesterday, but you can’t really see them.

 

Of course, I have like 350923752 of the dog though

 

Dinner was easy: gnocchi with sauteed zucchini and mushrooms with sausage in roasted garlic marinara sauce.

 

Workout was simple: Sprint intervals, bosu weighted squats and lots and LOTS of single leg dead lifts (the last set I combined the deadlifts with a clean and jerk- it really tests your balance and fatigues your calves. In other words: it was awesome)

 

Not too crazy about this shirt. It’s too loose around my waist and too tight and short on my hips. I thought of selling it, but Tyler convinced me to keep it for at-home workouts.

Speaking of Lululemon, I am now COVETING this jacket. It’s not online yet, just in select stores (and it just so happens to be at the store nearest me because I follow them on twitter and friends with them on facebook. )

Yesterday, I bundled up and took Layla for a walk.

 

I haven’t taken her for about a week because it’s just been too crappy out. It was still pretty bad yesterday- even the pup was slipping on the ice- but she needed to stretch her legs…

and roll.

I was kind of having a down-in-the-dumps day. The weather was yuck, I didn’t feel like doing school work, I ate too much candy, AND I was stressed about gym stuff (more in a sec). I told Tyler, and this was his response:

 

Yup. He basically TOLD me to go buy Lulu! I originally planned to swing by the mall after teaching my class, but I was sweaty and it was cold, so I am going as soon as I finish this post! :):):):):)

Ok, so the gym thing.

UGH.

Le sigh.

So, if you’re new to this here blog, lemme give you a quickie recap.

  • I taught 4 classes/week  at the Boston YMCAs when I was living in Boston (Core, Muscle, Cardio Ball)
  • I was certified to teach Cardio Kix/Cutz from Corpbasics
  • First Aid/CPR certified
  • ACSM cPT (certified personal trainer)

When I got to Calgary, I found that I could not get a paying job until I had my PR card. (Which is still not going to be until May/June/July 2013). Also, the positions at the Calgary YMCA’s are unpaid. So, the fitness director who I befriended allowed me to teach outdoor bootcamps downtown throughout the summer. She just recently gave me my regular indoor circuit class on Wednesdays, and the personal training department ‘hired’ me to teach a registered TRX class.

I had also been on the list for certification courses that were the equivalent to my American certs. Unfortunately, the courses have been barely offered, so I have been able to complete only ONE CERT since living here (I still need a Fundamentals certification to teach group fitness, and I need to CHALLENGE the cPT exam which is so stupid because I have my cert through the ACSM which is a program that the YMCAs here REFERENCE. doh)

WELL.

My fitness director friend accepted a job elsewhere, so I no longer have a buddy working at the Y. AND she informed me that since my certs are still not up to date, I have to have a moderator present at each of my classes.

Basically, a babysitter.

It’s liability issues.

And don’t even get me started on the music that we can/cannot use in classes.

I basically got fed up. Not only was I now leaving my house 90 minutes prior to class time so that I could drive the 4 miles downtown and park 1 mile away from the gym (for free parking) then trek ELEVEN FLIGHTS of outdoor stairs to get there, but I couldn’t get the certifications in a timely manner due to THEIR scheduling, and I have to have a babysitter? AND not get paid? No. Not good.

So, unfortunately, I had to go to the director yesterday and tell her that I could no longer teach classes.

Do you have any idea how hard that is? It was my 2 hours a week of being able to be around other people and teach them what I love. And get in a great workout.

But I don’t want to be on thin ice with liability issues until they can offer me the proper certifications. Then, as soon as I get my PR card, I am going to a private gym for a full-time PAID position.

It didn’t help that I was having approx. ONE PERSON attend my Wednesday classes each week,
