Yummy Chili

Recipe you MUST try: Crock Pot Chicken Taco Chili from SkinnyTaste

Holy Moly, was it tasty (and there’s a bit left, so I get some more today!) I actually made half of what the recipe calls for since the two of us are pretty sucky at using up all the leftovers. I topped mine with a dallop of greek yogurt and a pinch of cheese.

Yesterday’s workout felt GOOD. I did the strengh “ladders” from this phase of Best Body Bootcamp at home, then went to the gym to bust out a 30 minute interval run and 20 minutes on the spin bike. Here’s what my run looked like:

Hey, so I am going to be boring and do another survey. Mostly because the coffee hasn’t kicked in yet and I am brain dead. Yay!

1. Last thing you ate:

Multigrain Cheerios (my weekday breakfast of choice)

2. Last beverage you drank:

Coffee. Coffee. Coffee.

3. Last workout:

See above

4. Last thing you pinned:

Lace wrapped mason jars

(I totally forgot about pinning this, by the way, but I ironically took a bunch of used glass candle jars- put them in the freezer for a couple hours, popped out the leftover wax, and now they’re ready to get some similar decorating!)

5. Last text message you sent:

Well, it’s not the last one, but I thought this rant I sent Tyler yesterday was pretty funny

6. Last blog you visited:

Meh, I sort of skimmed over a ton and Marked as Read when I woke up- haven’t clicked back over yet to check more out. Actually, I lied. I clicked on Its Linz post on pumpkin muffins (through twitter)

7. Last tweet you sent:

8. Last place you visited:

Yesterday I went to Safeway, Pet Planet, and the Y. Super exciting stuff.

9. Last time you did ab work:

Sunday night. I did side crunches on the bender ball.

10. Last show you watched:

We have been recording this season of Revenge because I was obsessed with it. But I watched the first episode of this season this morning, and I am so over it.

And I leave you with my thoughts about school right now:

Ok, your turn- answer one or some or all of these!

Gangnam Style

I made another new-to-me dinner last night, and it was pretty good.

Couscous with veggies and bacon. Pretty self explanatory. But the secret was in the dressing! After you cook the couscous as directed, sautee any veggies you have in the fridge (I used red pep, zucchini, and an onion from the garden), and sizzle up about 5 pieces of bacon, toss them all together in a bowl.

Then- the best part- coat the mixture with dressing made up of:

  • Juice of one lime
  • 3 T olive oil
  • 1 T honey
  • 1 t paprika
  • Dash salt
  • Dash pepper

It was a really nice dish. Only complaint from Tyler was that it was too sweet. He probably would have enjoyed it more if there was a higher ratio of bacon. I would suggest tasting the dressing before coating the dish to make sure it’s to your liking.

Yesterday’s workout came in three parts.

Part 1: Strength Circuit from Best Body Bootcamp. For the workout I chose, she had us doing 5 sets of each exercise before moving to the next exercise. Each set was supposed to use higher weights, but since I didn’t have much choice from working out at home, I made sure to do variations for each set to incorporate muscle confusion. For example: with bench presses- first set was with feet flat on the ground; second set had my legs in ‘table top’; third set my legs were fully extended; fourth set I did on the stability ball; fifth (and technically sixth set) I did single arm presses.

I’m not sore today, but I definitely felt the challenge as I progressed.

Part 2: 45 minute walk with Layla. I wore a jacket, but hot dang I was a sweaty mess by the time we got home. I chose a route that was very hilly so I could work those glutes just that much more 🙂

Part 3: Cardio. I buzzed on over to the gym for a 25 minute interval run on the treadmill and 10 min HIIT on the elliptical. Ummm, it’s been over 3 months since I have been on the elliptical. How did that happen?

Today’s workout will be at the Eau Claire YMCA downtown. I am co-teaching HEAT (indoor bootcamp) then going over some kickboxing stuff with the fitness director to see if I am eligible to instruct an upcoming class. Then probably some sweating on the treadmill.

I leave you with my current favorite jam/dance/I will be breaking this out at the retreat this weekend:

If you scroll to 1:27, that might be what I look like while instructing my class this afternoon. #justsaying. Gangnam Style.

Ma, The Meatloaf!

Consider my day made. Lookie what yours truly got today

Bahaha yes! I don’t LOVE these books as in I’d tell you they’re my favorite, but I do love laughing at how dirty and cheesy the plot is. For reals. First 20 pages: “oh, woe is me, I’m a single girl and lonely” rest of the book: sex sex sex. Hahaha so bad.

Twyla and I hit up the Barbell Blast class today down the at the Eau Claire Y. It was great! Bing bang boom, we were a-movin’ and a-shakin’ and lifting those weights like they were going out of style. Only downfall: after class, we had to climb the dreaded stairs to get back to my car. That alone was a workout!

Dinner tonight was meatloaf.

“Mom, the meatloaf….F$&*#!”
Hahaha

This lady had no eggs in the fridge, so this is what I came up with

    1 1/2 lb ground beef
    1/4 chopped onion
    1/4 tsp salt
    1/4 tsp pepper
    1 cup milk ( I used almond)
    3/4 cup quick oats
    Ketchup

Preheat oven to 350 degrees. Combine all the ingredients (use ketchup to top. See picture) and place in a loaf pan. Bake for 60-75 minutes. Let sit for a few minutes before cutting and serving.

The result:

Pretty good. Really easy.

Especially for those nights when you don’t know what to make an just need something to schlop together
